My partner, Louisa, is raising money for UNICEF charity this week by doing the ‘Live below the Line” week. She has to survive on £1 a day. Sounds hard to me. I looked at the shopping list for her for the week and was shocked at how she was going to survive, but it also made me think:
‘There are some healthy choices here and that although many people think it is perhaps expensive to eat a healthy diet of good food choices, we can take something from this and actually realise that we can eat healthily for less.’
Her main food choices are made up of eggs, vegetables and meat and then herbs and spices for flavour. This is really what our diets should be made up of and the only expensive food item is meat (and fish)
A great way to think of putting together our meals is to have 4 fists of vegetables, 1 fist of protein and a thumb of good fat. What is good fat you ask? – avocado, olive oil, coconut oil, pumpkin seeds etc.
Therefore a meal could be:
– 1 free range chicken breast marinated in herbs and spices (for example lemons, fresh rosemary, olive oil and garlic is a good one)
– 1 fist of Broccoli, one fist of spinach, 1 fist of cauliflower,
– 1 fist full of salad (watercress, celery, peppers, radish and cucumber, olive oil and balsamic vinegar)
This is a very simple idea and very cheaply and easily done. There are no excuses really.

So saying eating healthily is expensive should definitely not be an excuse. It is a case of being disciplined, creative, and having long-lasting will power.
